Rebel Straight Bourbon Whiskey - Cognac Barrel Finish Founded in 1849 by William Larue Weller, Rebel have been defying trends since the very beginning. At that time the everyone was creating bourbon using a rye mashbill. They decided to do things differently, and pioneered wheat-based bourbon.  Now, over 170 years later, they continue to defy trends - whilst also winning awards with their wheated recipe.   There are a number of requirements for a Bourbon to be labelled as a 'straight bourbon'. They need to have been aged for a minimum of two years (and if under four, the age must be shown), and not have any added colouring, flavouring or other spirits For their Cognac Barrel Finish (which is produced exclusively for the EU market), they take their original Rebel Straight Bourbon (which is aged for at least 4 years in American Oak), and give it a final ageing in cognac barrels for a further 6 months. This adds additional depth and flavour to the already delicious Bourbon! It's colour is a bright amber, which gives aromas full of ripe fruite and berries and sweet honey. Vanilla, caramel and a hint of oak come through too. The flavour remains full, like the original. Dried fruits, rich plums, sultanas and vanilla all come through. It finishes with a defined warmth and lingers pleasantly on the palate. The Stillery's Dutch North Sea Gin Dutch North Sea Gin is a new creation from the guys at The Stillery. This gin is very fresh and often omits the bitter notes that you normally find in a gin. After the success of their local flower-inspired Most Floral Gin, it was time for a new gin. For this gin they left the country and traveled to the Dutch North Sea in search of special flavors and ingredients. The Dutch North Sea gin from Stillery is therefore completely inspired by ingredients from the Dutch North Sea and coast. Local but slightly different. For example, sawn sea oak, raspberry leaves, blackberry leaves and sea buckthorn are used in the gin. Each and every one of them intriguing ingredients from the Dutch coast, which give the gin a very fresh taste and often omit the bitter notes. This gin has one foot in the surf and the other in the dunes. A place has also been made for the invasive seaweed variety Japanese berry weed. This seaweed has the ability to completely take over ecosystems by growing incredibly fast, up to 10cm per day! This ensures that everything that lives under the Japanese berry weed gets less or almost no sunlight. Fortunately, The Stillery has taken over the Japanese berry weed by getting it from the North Sea, distilling it and then processing it into the gin. Eagle Rare Kentucky Straight Bourbon Whiskey This premium Bourbon is produced at the Buffalo Trace Distillery in Frankfort, Kentucky. This is the oldest continuously operating distillery in America.... so they know a thing or two about producing Bourbon Whiskey! The American bald eagle symbolised on the front gives an indication as to the contents of the bottle. This bird of prey is the symbol of American freedon and independence. It symbolises the rarity of the Bourbon, released only in limited quantities, and known as one of America's best bourbons. In fact it is the only Bourbon to receive a Double Gold medal five times at the renowned World Spirits Competition in San Francisco! There are a number of requirements for a Bourbon to be labelled as a 'straight bourbon'. They need to have been aged for a minimum of two years (and if under four, the age must be shown), and not have any added colouring, flavouring or other spirits. Eagle Rare has been aged for at least ten years, with each barrel being carefully selected   This attention to detail, and long ageing process ensures that this is definitely a rare, and delicious Bourbon.  It has a complex nose, with delicious aromas of toffee - joined by hints of orange peel, herbs, honey, and warming leather and oak. On the palate the taste is dry and bold. A delicate touch of red fruits and honey rounds out the candied almonds and distinctive rich cocoa. It finishes with lingering flavours of vanilla and more spice from the oak. Perfect Serve Whilst this is easy to enjoy as you would most bourbons, we liked this with just a dash of water. This seemed to open up the flavours - and brought the drink alive.

An aspiring Maetro will spend 15 years training under the supervision of the senior Maestro del Ron Cubano to become a true master of their craft. Its not something you can learn from books, it's "a cultural heritage, passed on from Maestro to Maestro’’ Havana Club use what nature gave to Cuba, ‘the isle of rum’. The rich sugar cane, fertile soil and the tropical climate is what makes their rum so special, and what makes it difficult to replicate the distinctive taste outside of Cuba. Described as "The very essence of Cuban rum', their 7 year dark rum is highly versatile. It's allowed to mature in ex-Bourbon barrels, and truly showcases the rich natural flavours of Cuba. The cuban terroir comes through with aromatic tobacco, sweet tropical fruits, molasses, spices, and vanilla from the continuous ageing process, enhanced by the slow release of aromas. More from Havana Club Perfect Serve  Whilst it was initially created for sipping neat, it can also be enjoyed on the rocks, served simply with a mixer such as cola but also adds a distinct, delicious flavour to cocktails.  We love this in an Old Fashioned Cocktail. In a rocks glass mix a teaspoon of white sugar and two dashes of Angostura Bitters. Then add 50ml of Havana Club 7 and stir again. Add a few cubes of ice and stir for 20 seconds to chill the drink, garnish with a twist of orange peel and enjoy!

Mix with a barspoon and top up with soda water. Add a sprig of mint to garnish. Or how about a Frozen Banana Daiquiri? Hennessy VS Cognac The history behind Hennessy goes back to 1765. It was an Irish Jacobite officer who had served in the army of Louis XV that started the Hennesy Cognac Distillery. He had retired in the cognac region where he setup the distillery and began exporting his products to the UK and Ireland. Now known as one of the 'big four' cognac producers in the world (who between then produce around 85% of the world's cognac). Hennessy is the largest of the four, and produce around 70 million bottles of cognac a year. In fact, it was in 1840 that Hennessy became the worlds leading exporter of Brandy, and to this day have not lost that title. Being a type of Brandy, Cognac falls under the French appellation d'origine contrôlée (AOC) which means there are strict requirements to be called Cognac. These include twice distilling specific grape varieties in copper pot stills and aging for a minimum of two years in Limousin or Tronçais oak casks. The VS (very special) designation denotes that the youngest brandy within the blend has had the minimum two years in casks (it is always the youngest brandy in the blend which gives the designation).  Hennessy VS Cognac is a blend masterfully created from over 40 different eaux-de-vie. It is the Master Blender who oversees this process to ensure the quality.  The result of this blending and knowledge is a full bodied cognac. With a renowned smoothness, and a touch of sweetness it has distinct spice notes. The aging in wood gives a light nuttiness to the cognac, which join with flavours of rich dried fruits and berries. These are all rounded out by warming vanilla. Interesting fact: In 1813 Jean Fillioux was appointed Master Blender. A member of the Fillious family has kept this role ever since - more than 250 years and a total of eight generations!
