This book provides a new way of understanding Japanese management by focusing on the relationship between Japanese companies and their social practices. Whereas previous studies have often concentrated on the uniqueness of Japanese companies'' systems (e.g., lifetime employment, the seniority system, company-specific unions) or methods (e.g., bottom-up management, Toyota production methods), this book explains the uniqueness of Japanese companies'' activities and practices. It especially highlights the day-to-day cleaning activities that many companies have practiced for numbers of years, regardless of their size or industry. Activities that continue beyond a certain period of time are called social practices, and the book clarifies how this particular social practice has historically been formed in Japanese companies and then shows what it means to keep cherishing those cleaning practices. This study consists of two parts: historical research and theoretical research. The historical research sheds light on the relationship between Japanese companies and cleaning activities from a historical point of view. On the basis of old literature and in-house documents, the reader can understand how Japanese companies have positioned cleaning practices in the process of increasing their growth potential and competitiveness and in maintaining their businesses. The second part explains theoretically the relationship between cleaning and management with quantitative and qualitative data from Japanese companies today. To cut costs and maximize profits, hospitals in the United States and many other countries are outsourcing such tasks as cleaning and food preparation to private contractors. In Cleaning Up, the first book to examine this transformation in the healthcare industry, Dan Zuberi looks at the consequences of outsourcing from two perspectives: its impact on patient safety and its role in increasing socioeconomic inequality. Drawing on years of field research in Vancouver, Canada as well as data from hospitals in the U.S. and Europe, he argues that outsourcing has been disastrous for the cleanliness of hospitals—leading to an increased risk of hospital-acquired infections, a leading cause of severe illness and death—as well as for the effective delivery of other hospital services and the workers themselves. Zuberi’s interviews with the low-wage workers who keep hospitals running uncover claims of exposure to near-constant risk of injury and illness. Many report serious concerns about the quality of the work due to understaffing, high turnover, poor training and experience, inadequate cleaning supplies, and on-the-job injuries. Zuberi also presents policy recommendations for improving patient safety by reducing the risk of hospital-acquired infection and ameliorating the work conditions and quality of life of hospital support workers. He makes the case that hospital outsourcing exemplifies the trend towards "low-road" service-sector jobs that threatens to undermine society’s social health, as well as the physical health and well-being of patients in health care settings globally.

During heat treatment in dairy production, the rapid formation of heat-induced fouling deposits on the plant surface leads to reduced efficiency of heat transfer. Therefore, a regular cleaning process is required to soften the heat-induced protein deposits and then remove them from the plant surface. The mechanical property of the deposits is one of the key issues of the cleaning mechanisms since the non-fractured behaviour dominates the deformation of the fouling layer and the failure behaviour has a great impact on the cohesive removal of fouling deposits. Considering the complicated geometry of fouling deposits and their irregular distribution, indentation experiments were carried out on various kinds of protein deposits. The experimental results reveal the significant influence of the thickness of fouling deposits on their mechanical behaviour and the time-dependent nonlinear behaviour of the deposits. Furthermore, heat-induced whey protein gel was used as the modelmaterial for fouling deposits and the non-fractured and fracture behaviour was characterized using compression and wire cutting experiments, respectively. The material parameters identified using the inverse finite element method allow the prediction of fracture behaviour under localized external loads and provide a deeper insight into cohesive removal. To investigate the softening effect during caustic washing, tensile experiments were conducted on chemically treated and untreated whey protein gels. Adequate chemical degradation leads to a softer mechanical response and increased stress relaxation, making whey protein gels more flowable and more resistant to tensile deformation. The experimental results provide useful data on the failure behaviour of chemically treated whey protein gels.
